Meetha Daliya Recipe

 Ingredients

1 tablespoon coconut oil/ ghee

1 cup Cracked Wheat (Wheat daliya)

2 tablespoons mixed nuts (sliced – almonds, pistachio)

¼ cup + 2 tablespoons sugar

1 tablespoon Raisins

2½ cups Almond Milk

¾ teaspoon Green Cardamom (crushed)

1 cup Almond Milk

Sliced Pistachios

Handful of Saffron Strands

A few cardamom pods

Method

Step 1: Set the Instant Pot to sauté mode and add the coconut oil. Once the coconut oil has melted, stir in the cracked wheat.


Step 2: Cook for around 2-3 minutes. Roast the daliya in coconut oil till it turns slightly brown and aromatic.


Step 3: Pour in the almond milk, crushed green cardamom, and dried nuts, and stir well. Almond milk has a creamy texture as well as a nutty flavour.


Step 4: Mix in the sugar again. Close and seal the Instant Pot lid. Cancel the sauté method and cook the meetha daliya pot for 10 minutes on HIGH using the manual or pressure cook button.


Step 5: After the cooking period is finished, let the pressure naturally release.


Step 6: Open the lid slowly once the pin drops. Although the daliya will appear soft and dry, just add more milk and modify the consistency to your preference.


Step 7: A smooth and creamy meetha daliya is ready with a good stir.


Step 8: Enjoy a tasty treat by topping it with your favorite nuts.



Tips to Enhance the Taste

Roasting the daliya in ghee or coconut oil is a must before proceeding with the recipe. The flavour of this dish is enhanced by a well-roasted daliya, which also has a superb flavour.

Jaggery can be used to sweeten meetha daliya instead of sugar, which is the traditional method. The addition of jaggery will give the dish a slightly caramelised flavour and increase its healthfulness. Alternatively, you can use brown sugar instead of regular sugar; this will give the meetha daliya a nice flavour and colour.

This daliya has a delicate, thick porridge-like consistency due to the addition of milk. Non-vegans can make meetha daliya with regular milk.

In addition to the cardamom powder, freshly grated nutmeg can be added to the daliya kheer. Nutmeg will give our dish a delicious, warm spiciness.

Ghee can be used in place of the coconut oil in this recipe. Ghee will give our daliya kheer a deliciously nutty aroma.

Serving Ideas

You may either serve it warm or allow it to cool fully before chilling it in the refrigerator. Top it with chopped fruits like apples, bananas, or sweet mangoes before serving. For some extra fun for kids, you may also add chocolate shavings or chocolate chips.
